Work-related injury/HR issues

My wife works as a chef.

She has been employed on a permanent contract for just under a year.

Recently they hired a new manager who is supposed to help her cook and also manage things like ordering.

Unfortunately said manager is an arrogant and obstructive p***k, and he has alienated all the other staff. I don't think they are keen to replace him though, because he is the third person in this position in about 3 months.

Anyway he makes her job more difficult by refusing to help her and then asking her to help him when she is already cooking for 80 people. On Monday she injured her back lifting a pan of potatoes, which he had left in a low sink, and on Wednesday she went to hospital where they said there was nerve damage, hopefully not lasting, and she would need to take a few days off work and subsequently avoid heavy lifting for a couple of weeks.

I am just wondering what to say to the HR to get this on record and also whether they have any liability to her in terms of the injury/sick pay, etc.
