Roasted chicken breast? Is it possible?

I got a chicken breast out of the freezer last night as I really fancied roast dinner

However it is skinless so is it possible to roast it or am I going to have to come up with another idea?

All I can find on the web are recipes for roasted skin on chicken:confused:

If not what else can I have bearing in mind its just me (so meal for one all together now ahhhhh!)and I have carrots leeks and mushrroms that need using up and a couple of sweet pots that I was going to roast to have with my roast dinner

    i roast skinless breasts all the time.
    just put it in a small roasting dish and roast away as you would normally :)

    Lack of skin may make it a bit tough and dry though. I would put a rasher of bacon over the top if you have one to keep it moist, or baste it with butter regularly

    you could always cut the chicken up into pieces and put it in a pan with your veg and then roast it to make a stew

    Strange - I'm just doing that now :)

    I slit mine and stuffed them with blue cheese, wrapped them in bacon, and then foil.
    They're in the oven now with potatoes roasting with garlic cloves, herbs and olive oil.

    I use skinless breasts and wrap them up in greaseproof paper after seasoning them. After baking for 30 mins, they are so juicy and delicious, much better than roasting IMO.

  • I do chicken parmesan. Spread chicken breast with pesto (or salsa), put a slice of ham on top then grated strong cheese. Bake on tray in oven.

    I made chicken burgers today. All you need is a couple of slices of bread for your breadcrumbs, an egg and some mustard. You also get the advantage of beating the chicken.
