Carrots. peppers - and tomatoes?

Question for you cooking experts..
I was going to make carrot and ginger soup, which I'd made last week and it was lovely.
But got some peppers left over from fajitas the other night. Do you think I could roast them and chuck them in the soup? What about adding a tin of tomatoes too? Leave the ginger out or put some in as well?
Any idea how long ginger lasts?
So many questions!

Im a newbie...but this one i can answer -Woohooo ...if you have fresh ginger you can freeze it..either as you buy it, or i cut it into the big knobbly bits so i can take out just what i need..you dont have to peel it before freezing either !!...yep you can roast off peppers and throw them in your soup, if you dont want to use ginger have you tried a bit of ground corriander...its yummy!-6 -8 -3 -1.5 -2.5 -3 -1.5-3.50 -

I usually do carrot and coriander so fancied a change. Always go back to it though! scrumptious
