Sauce for lamb???

Hi all,
Just wondered if you can help me out again?
I have my mum and step-dad coming round for dinner tomorrow and am cooking lamb chops and roast veg... I just need a nice sauce to go with it... I though about making gravy but as I have spent the past few weeks telling mum all about my new found love for all things kitchen :rolleyes: , would like to do something a bit, well... special!
Any ideas on how I could 'posh up' an otherwise normal meal?

You could do 'minted' peas, bread sauce usually goes with turkey but you could give it a go! Its a good idea to have mint sauce or something with mint in with lamb as its got a high fat content and is harder for the body to process, the mint helps to digest it and tastes real good too!0

Am going for the Delia recipe (have always avoided her recipes... am from Ipswich and a devout fan of ITFC, never thought I'd be following a recipe from a Norwich director lol). Will serve with Mint sauce as well, OH loves it!
