I just found an old can of coconut milk at the back of my cupboard - best before end Feb 2012. Do you think it's ok to use?
I usually assume that tinned/canned food can't really go bad and have a little taste to make sure it's ok. However, I have never had coconut milk before so not sure what it should taste or look like so won't be able to tell if it's still ok after opening it.

I'd guess it's probably separated by now. You might have a gloop of coconut at the bottom of the tin, and the coconut water sitting on top of it. You should be able to tell if it's gone rancid by smelling it.0

I will be fine, for a start it's a best before date not a use by date.Opinion on everything, knowledge of nothing.0

It`ll be ok, but if you find it`s separated don`t go thinking it`s because of the date. I use tinned coconut milk quite a lot, and it often separates even well within the date, especially when stored in the cold. It blends back together when you heat it & stir it.0

Don't panic, like I did the first time, if you open the tin and it looks like dried white emulsion paint.

I now regard this as a good sign. I'd much rather have it look odd than contain an unecessary additive.
PS. Mix it with a tin of condensed milk and put it in the freezer to make coconut ice cream.If you fold it in half, will an Audi A4 fit in a Citroen C5?
