Is there such a thing as a list of divorce proceedings in NI? Almost like something on the NI Court website?

Yes you can search for a decree absolute on the NI courts website. Think it cost £20.0

As above, the info is available on the courtsni website. It helps if you know which court it is going to be in and bear in mind that it only gives listings for 7 days.
In addition I found that my own did not appear on the online listing last year!0
