How to make soup out of stew juice?

I've just made a beef stew and there's tonnes of juice... can this be made into soup and if so how would I go about it?

Yeah - that would make great soup - just cook loads of veg/barley/lentils/dried peas in it. Lovely rib stickin' stuff

How do I thicken it up though? I have some yummy tasting juice but it's just fatty water right now?

I would fry some onions in oil for a few mins (maybe bit of garlic as well), add any other veg you want to put in for another few mins, then add the stew juice plus some more water if needed, and simmer until veg is as soft as you like it.. if there's any little bits of meat left you can chuck em in as well.

Works very well for a beefy minestrone-type soup too - add a tin of tomatoes or two and some pasta/ broken up spaghetti.

(As you can tell I'm not the most, er, precise of cooks, it usually turns out well though! :))

Is there any way of thickening up what I already have though?

Angel - the veg would thicken it up - specially if you blitz it or mash some of the veg after they are cooked - potatoes are good for this.

It's just like you already have a great tasting stock as a base. Any extra veg/pulses etc will thicken if you then blitz it all - so that's tomorrow's lunch sorted then!
