Bread.... Again !

After several naff loaves from the breadmaker (I don't know what I do wrong :confused: ) I decided to make my own bread by hand :T

I have tried 2 recipes, one from here and one for Naan bread which uses yoghurt and was delish - I will adapt it to make cheese and onion bread, herb bread etc - Both were great, so much better than the BM

My question is, can I make the dough the night before, leave it in the fridge (or out :confused: ) and bake it the next day ?

I just don't have the time to do it in the daytime as I have little ones, and if I bake it in the evening I don't like it the next day - I am very fussy about 'fresh' bread and it has to be *fresh* !

    Yes, you can leave dough overnight in the fridge. It will rise slowly and you'll get a better flavour from it. When you want to cook it, take it out of the fridge, knock it back and leave it for the second rising, and then cook as normal.

    If you leave the dough out of the fridge it'll overproove and collapse, and won't taste good at all, but the fridge method is fine :)

    Sorry for delay in posting my Naan Bread recipe

    12oz Plain Flour
    1 and half tsp sugar
    1 tsp salt
    half tsp baking powder
    half ounce fresh yeast (or 7g sachet of dried)
    quarter pint warm milk
    5fl oz plain unsweetened yoghurt (i used greek as it was all i had)
    4oz butter

    Dissolve yeast in warm milk then stir in yoghurt

    Place flour, sugar, salt and baking powder in bowl.

    Stir the milk mixture into the flour mixture and mix thoroughly then knead to form a smooth dough.

    Cover and leave for 4 hours to rise.

    Divide the risen dough into about 12 pieces and roll them into balls. On a floured surface flatten them and shape into oblong shapes.

    Lightly grease a heavy bottomed frying pan and heat till very hot. Cook the naan on one side only then spread with butter and transfer to hot grill - Cook until browned and serve hot.


    My DS14 adores this bread and would eat it every day after school as a snack if I made it that often. He says it is better than the Indian Takeaway although I prefer theirs. I have tiny ones too who love it.

    Its really simple, prep only takes a few minutes - I do it after lunch and then just ignore it till teatime.
