Morning MSErs! I just wanted to pick your collective brains for recipes involving beans and meat. We had some people over last night and enjoyed Rachel Allen's Lamb and Chickpea tangine, which effectively served nine. Although it involved 1 kg of cubed lamb, it also contained 3 cans of chickpeas, which I thought was a nice balance of expensive and cheap ingredients. Our other standby is chilli. Has anyone else got any ideas for similar recipes please?
Chilli
500g pack of mince
2 tins tomatoes
2 tins kidney beans, drained
1 oxo cube
1 tsp chilli
1/2 tsp cumin
2 tsp dried herbs
2 onions, chopped
2 cloves garlic, chopped
2 sweet peppers, chopped
Tabasco sauce, if desired
Season to taste.
Bung everything in the slow cooker and cook on medium for 6-8 hours.
Rachel Allen's Lamb and Chickpea Tangine
1 kg cubed lamb
3 onions, sliced
6 cloves chopped garlic
3 tsp cumin
3 tsp coriander
1 1/2 tsp cayenne pepper
1 1/2 tsp smoked paprika
3 tbsp tomato paste
300g dried apricots
1 1/2 litres chicken stock
3 drained tins chickpeas
3 tbsp honey (optional)
I'm afraid I didn't brown anything but bunged it all in a large casserole and cooked it at 160C for 3 hours, then thickened at the end with cornflour.
Anyone else got a favourite like this?
