How about sprouting some of the mung beans and they will be ready to use in a stir fry with the turkey? Or you could make a curry out of the 2 packs of beef and spin it out with a tine of pulses (or dried ones if cheaper).
Could you get one of the other couples to bring a pud?

I used to do dinner for 3 couples (funny, we're all divorced now
). One time I did 3 main courses (
) - the one everyone loved was the meatballs in a smoked tomato sauce (I actually bought a bottle of liquid smoke - does anyone know if you can still buy it?) You could bulk them out with breadcrumbs, and if you add some spinach it will look really colourful. Serve with bulgar wheat if no rice.

The bookpeople have a fantastic book called "Something for the weekend with 8 around the table" - all the recipes serve 8 and there are some really nice dishes. It's only £3 (reduced from £25!) and there is a free delivery code on the vouchers board.

I agree with everyone - with bread and time to prepare you have everything you need to prepare a wonderful summer pudding, add some cream and it will be lovely.
For main course, use your steak in a slow cooker or caserole dish with onions and mushrooms, gravy and seasoning - add mash potato mixed with spring onion or leek (very trendy in restaurants) with a veg.
Buy some nice coffee to round off the evening and make some little biscuits or brownies and hope that everyone arrives with enough wine to last the night!0 -

Summer Pudding Recipe with Raspberries or Blackcurrants, Water, Sugar & Sliced White Bread.
INGREDIENTS:
2 lb (900g) Raspberries or Blackcurrants
1 pint (550ml) Water
1 lb (450g) Sugar
A Large Loaf of Sliced White Bread
METHOD:
Cook the Fruit with the Sugar and Water until tender. Meanwhile, line a large pudding basin with the White Bread, cutting off the crusts. Cut into triangles and carefully fit around the basin without any gaps. When completely lined, tip in the Fruit and as much juice as the dish can take. The Bread should soak up all the juice and become pink. Cut some Bread to fit around the top. Put a plate that fits on the top and weight it down. Leave overnight in the refrigerator until well chilled. Turn out and serve with cream. Serves 6.
Can of course use the frozen fruit you have. Many varieties in recipes online if you want to try on googleOne day I might be more organised...........
