Okay, I am crazy and now I need your help

I love baking and even if I do say so myself I am very good...UNLESS it is scones :eek: I had a call from Sadam Hussain last time I made them asking if he could buy them for ammo!!!!!
Now, don't ask why but I have offered to make 100 for a cream tea party (why am I so daft) anyhow looking forward to a challenge but wondering if anyone had a really nice fool proof scone recipe please

This is the recipe I always use...
8oz SR flour
Tsp Baking powder.
2ozs marg
2tblsps sugar (leave out for chesse scones)
grated cheese (cheese scones only lol)
aprox 1\4pt milk
Rub marg and flour together. Stir in sugar or cheese, depending what scones you are making. Add enough milk to make a not to sticky dough, but not a dry one. Pat into a round big enough to bet four (comfortably) medium cuts from. Re-knead, pat into round to get two medium cuts from, re-knead pat into round to get one medium cut from. If enough dough left repeat to get one more scone. Still some left, mould into a ball shape and eat as a taster after they have cooked :-) Grease a baking tray place on tray and cook on top shelf of a hot oven (reg 7) for 10 mins, They should sound hollow when you tap the bottom of them when cooked.

Saw something on telly the other day & apparently you will get a better rise if you dont twist the cutter as you use it - just pres straight down & lift offI THINK is a whole sentence, not a replacement for I KnowSupermarket Rebel No 19:T0

Handle the dough as little as possible. Don't knead it like bread.
I have had good results using plain yoghurt or buttermilk instead of milk. The slight acidity reacts more with the raising agent. My scones improved greatly when I stopped using a recipe that added egg.

My advice would be to use a knife to bring ingredients together and DON'T over mix it - just bring it together, turn out on to a board and press out (don't even use a rolling pin) then cut out but don't twist0

Tip from lovely James Martin on yesterday's Sat Kitchen, after cutting the scones place them upside down (smooth side up) on the baking tray - they will rise straighter and not fall over.0

my godmothers recipe (fattening but foolproof!)
3 cups plain flour
1 cup butter
4 tbsp sugar
3 heaping tbsp baking powder
1/2 tsp salt
2 tbsp oil
milk
2 eggs
(This is an american recipe 1 cup = 8 oz by volume, not weight)
Mix dry ingredients together, cut in butter. Put eggs + oil in a fliud measuring cup + add enough to get 8 oz. Stir, then make a well in the dry ingredients and mix together. I then divide the dough into 3, form each third into a large pattie and cut in 4. Place on a baking sheet, ungreased, and bake at 400'F (200'C) for 10-15 minutes, or until they are hollow-sounding when tapped.
Can add cheese or mixed fruit, or raisins, about 4 oz.
This recipe is great as it's almost impossible to over mix, and actually if you dont' mix it well they are crumbly. I have successfully increased the recipe to 7x.0 -
