Recipes around oats and rice (separate not together)

Hi all,

I have a lot of rice and oats in the cupboards and wondered if anyone has some tasty recipes I can try!

I have had a look on the recipes on the GC thread but there's so many to look thru and I haven't the time (being a full time working mum to one!)

I already make twinks and flapjacks wih oats and use rice to have with chicken etc but want to try so other recipes

    use oats instead of half of the flour in a crumble topping

    pilau rice is a great standby and useful for using leftovers
    here's the basic recipe:

    cook with stock instead of water, add any or all of a small handful of sultanas, small handful of flaked almonds, handful of chopped leftover chicken just before putting on the lid and leaving to cook. You can add other spices (cinnamon, saffron, cardamom etc) add different meats or other leftovers. It's a great way of making a maincourse out of rice and some flavourings and leftovers or storecupboard ingredients.

    Try this ...

    SAVOURY RICE

    Serves 2

    INGREDIENTS

    1 onion
    100g of bacon
    50g of cooked ham
    2 tablespoons of oil
    150g of rice
    1 beef stock cube
    400ml of water
    50g of frozen peas
    1 tablespoon of Worcestershire sauce

    METHOD

    Peel the onion and chop it into tiny pieces. Chop the bacon and ham into 2cm (1 inch) pieces.

    Put the oil into a frying pan on a medium heat. Add the bacon and onion. Fry them for about 5 minutes until the meat is just cooked. Stir frequently to stop them sticking.

    Add the rice. Stir well. Fry for another 5 minutes until the rice is golden. Stir all the time to stop it sticking.

    Add the stock cube and water, peas and Worcestershire sauce. Mix thoroughly.

    Bring to the boil, then turn down the heat until it is just boiling (simmering). Stir once to stop it sticking to the bottom. Cook for about 20 minutes, until the rice has absorbed all the liquid.

    DO NOT STIR!

    Take the pan off the heat and let it stand for a couple of minutes.

    Fluff it up with a fork to separate the grains.

    ADDITIONS & ALTERNATIVES

    Use a beef stock cube for preference, but a chicken or vegetable one will do.

    TIPS

    Basmati is the best all purpose rice. It cooks quickly, it is more fragrant (it’s Hindi for fragrant) than long grain and it also holds together during cooking.
    If you fold it in half, will an Audi A4 fit in a Citroen C5? :)

    oat and raisin cookies


    Ingredients


    Serves: 18
    • 85 g unsalted butter, at room temperature
    • 115 g light muscovado sugar
    • 1 egg, beaten
    • 115 g self-raising flour
    • 55 g medium oatmeal
    • 170 g raisins

      Preparation method

      Prep: 15 mins | Cook: 15 mins 1.
      Preheat the oven to 180ºC (350ºF, gas mark 4). Beat the buttericon1.png and sugar together until pale and fluffy, then gradually beat in the egg. Sift in the flour, then fold it in with the oatmeal and raisins.

      Drop heaped teaspoonfuls of the mixture onto 3 greased baking sheets, leaving enough space around each cookie to allow it to spread during baking.

      Bake for 10–15 minutes or until golden brown. Cool slightly on the baking sheets, then transfer to a wire rack and leave to cool completely. These cookies can be kept in an airtight container for 3–4 days.

    I am assuming long grain rice?
    I eat rice with almost any casserole / stew
    Any sort of pilaff recipe
    Kedgeree
    Left-over cooked rice: season well (and I add chillies) and mix with some egg then fry dollops to go with almost anything (usually breakfast)
    You can also mix with tinned tuna (or any fish) and make fish cakes

    I often make risotto. It's a great way to make a little protein go a long way! One of my favourites is Spanish rice using left over cooked chicken (from a roast, perhaps) and a small amount of chorizo (I use about 30g for 2 of us) and then throw in a handful of peas at the end.

    Another one I make is pea and prawn, but could do it with something like smoked haddock.
