Baking for Sunday early start BUT out Saturday... please help!

I volunteered to bake some cakes for a local charity event this coming Sunday but have only just realised that I am out at a family 'do' all day on Saturday.
It's an early start on the Sunday so I can't make them that morning and I'll be home late the night before.
I was going to make muffins but they are best eaten sooner rather than later... any ideas of what / how I can still come up with the goodies in so little time?
Is there anything that can be baked on Friday evening and still be fresh enough on the Sunday?
I don't know why but my brain is frozen... I think it's 'cos I want to make the best cakes possible for the sale.
All ideas welcome (I've already decided that a visit to M&S is cheating though...:o).

any sort of fruit cake will be better for a couple of days keeping in a tin as would a bran loafYou never know how far-reaching something good, that you may do or say today, may affect the lives of others tomorrow0

If you have an hour to spare Saturday night/Sunday morning, on the Friday you could pre-weigh ingredients for cupcakes and put them in sandwich bags. Also you could make some buttercream and put it in a piping bag and store in the fridge. That way as your making the cakes you can take the buttercream out so it reaches room temperature and speedily pipe them after they have cooled. Or if you have quite a bit of time Friday make iced fingers, they keep for a few days. Hope that helps!'I solemnly swear that I am up to no good'0

Carrot cake would be my choice - it's so moist and keeps ages (if you can resist eating it)!
