OSM recipes using these please ... ?

I'm having a cook - off today and trying to be very MSE by using all the bits and bobs lying about, that are short dated a la A girl called Jack (not very good when you are supposed to be following SW).

Anyways, i have so far I have chopped celery for the freezer, got tea going in the slow cooker, Lime and Sweet Potato bread a la AGCJ in the breadmaker, soup made for dinner in the soup-maker and later i will bake cakes. All that meant i had to sit down for a cuppa and brunch :rotfl:

So i was thinking, lime and coconut cakes (lime juice OOD), lemon and sultana cakes; any other suggestions/variations?

I have also discovered out of date dried parmesan in the cupboard. Technically i shouldn't be eating it on SW, but if i can use it up i'll not rebuy as i'm allowed fresh which i have, but not dried. So, is there any type of bread i can make with it, that i could maybe freeze and eat gradually so as not to blow the diet ;)?

PS Any suggestions welcome for the parmesan, and if it can be frozen and i have the ingredients in, all the better. Feel bad if i am going to have to throw it!

    How about a Mojito cake? Yummy!

    Mojito Cake (serves lots, and once you've licked the bowl you won't care!)

    You'll need:

    For the cake
    125g butter, at room temperature
    175g caster sugar
    2 large eggs
    65ml rum
    Zest of two limes (keep the juice for the syrup)
    175g self raising flour
    1tsp baking powder

    For the syrup
    100ml water
    100ml sugar
    3tbsp rum
    Juice of two limes

    For the icing
    100g butter
    150g icing sugar
    Juice of one lime
    Some Trebor Xtra Strong mints


    Pre-heat the oven to 170c / Gas 3. Line a 20cm cake tin.
    Beat together the sugar and butter until light and fluffy.
    Lightly stir together the eggs and rum, then gradually add to the butter mixture, beating well to combine between each addition.
    Fold in the lime zest, flour and baking powder.
    Pour the mixture into the tin and smooth the top. Bake for 30-40 minutes, or until cooked the whole way through.
    While the cake is baking, make the syrup.
    Mix together the sugar and water over a low heat, until the sugar dissolves.
    Bring to the boil and boil for 5 minutes.
    Leave to cool.
    Once cool, stir in the rum and lime juice.
    Once the cake has cooked, remove from the oven and let cool. Meanwhile, make the icing.
    Beat together the butter and icing sugar.
    Add the lime juice little by little, until you get a nice spreading consistency.
    Blitz the mints in a food processor (or in a saucepan with a rolling pin, if you're in need of anger management) and stir through the frosting. Add a little at a time to your taste, I used three but that was pretty minty.
    Once the cake has cooled you can assemble your creation!
    With a skewer or fork, !!!!! the cake all over. Paint the top with the rum and lime syrup, or spoon it over carefully.
    Spread the icing over the top and decorate with wafer thin lime slices and/or fresh mint leaves.

    Sounds amazing but i have no Rum, what could i substitute for it, do you know?

    Hmmm... Good question, I've always believed that alcohol should never be substituted!!

    Maybe some sort of fruit juice, or sugar syrup?

    Make parmesan crisps. Grate it, put into piles on a baking sheet that has parchment paper on it. Bake it on high for five minutes, till the cheese has melted together. Cool and eat.

    Although i have cut right down on my consumption. Maybe rum flavouring, or pineapple juice (although i'd be buying that just to use the lime up :rotfl:)

    Thanks hilstep, but this is powdered Parmesan. I do have fresh aswell, but that's in date and don't need to immediately use that up. That does sound nice though, but i can't see it being good on the waistline ;)

    You can add parmesan to soups for flavour - don't need much. Would normally use dried up fresh pieces but think the dried powder would work as well.

    I wouldn't worry overmuch about the date on your dried parmesan. I've eaten it months after the date, it's only a 'best before' I think.

    I know it's not very mse but I would give yourself a deadline for using up the bits and pieces and then throw/give things away and start SW proper. Unless you've got others in the house that will eat up all the bread and cakes you're making you'll never get started on the plan!;)

    Thank you. It's dated October 2012, so not too bad; and there isn't that much of it left tbh. My eldest daughter used to use it, nobody else liked it ( i preferred real cheese on spag bol etc pre-SW), so i can't imagine there is much left to use. I wanted to get it out the way in one go. I think that's the only culprit in the cupboard, the rest are DD friendly or SW friendly :rotfl:. I've started already in Nov, and lost nearly two stone; but doing it from home so in my own time is fine. if i have a cake at the weekend or a slice of bread as a treat, i won't beat myself up about it as my weight loss has been quite consistent. I have bookmarked the thread and already picked out a few recipes from there. I will try and pop over when i think on. I tend to chat SW on FB and pennypinching here though :grin:
