I made some HM strawberry ice cream with Elmlea and single cream - 50/50 mix - and froze it about 2 months ago...
In the instruction booklet that came with the maker it says that ice-cream should be eaten within a week... should I throw it out or can I eat it.

I don't have an ice cream maker but I'd be inclined to say it should be fine. I would imagine that the booklet says that more to cover themselves than as actual guidance to the user, much like sell by dates and the like.
Also two months isn't very long, you probably wouldn't think twice about eating store bought ice cream after that long, if it had been in there for a lot longer it might be different.
However, as I said I've never made ice cream so I might be missing something that someone else can help with! But I'd eat it!March Grocery Challenge: £59.46/£800 -
I dont think you can freeze single cream only double.But it might be ok as its mixed with something else0

I certainly wouldn't be afraid to eat it
it's very unlikely to have actually become dangerous.
The quality might suffer after a week though as home-made doesn't have the preservatives & other chemicals most commercial ice cream has in it, so I imagine that's what the warning's about.0 -
I make my own ice cream frequently in the summer and although it doesn't often last that long, I would happily eat it. My guess is that keeping it longer risks crystals forming on it which makes the texture less pleasing. It may also freeze harder over time,I'm not sure if this is something to do with the crysals or what--mine does this, just leave it to soften a bit before you serve so you don't bend any spoons:j0

I'm sure it will be safe enough to eat, but the quality may not be as good as when you first made it.

Yeah, it sould besafe to at (assuming it was safe to eat when it went in and hasn't been allowed to defrost at all). Bacteria can't grow at those temperatures. As others have suggested, the time limit is because taste and texture can deteriorate if food is left in the freezer for too long.NSD May 1/150
