Authentic Pizza

Had a take-away pizza for lunch (must try harder! ). I know they are freshly made - it was delicious. I make pizzas at home but apart from the resturaunt having a pizza oven it was tastey because of the coating on the dough. Does anyone know what this is? Its a course powdery coating on the base that makes it taste crispy, im sure pizza hut do a similar thing. Thanks!

use it in place of flour when you roll out the dough,some recipes will also include adding some to the mix0 -
