Lamb kofta/chicken kebabs

I'm planning to make lamb kofta and chicken kebab skewers. Would it be okay to prepare it all and put it on the fridge the evening before cooking it or is that not really a good idea? Could I least marinate the chicken for 24 hours?

    Marinade it all as long as possible

    However I wouldn't skewer them until an hour or so before cooking as you need to soak the wooden skewers in water so they don't burn.

    Doing it too soon and the skewers will dry out

    exactly as suki says! marinade overnight - but skewer as close to cooking as possible.

    Yes prepare it all and let it marinade overnight by all means lets the flavour get into the meat. If its fresh I'd marinade and leave overnight but for no more than 24 hours, if its previously been frozen I'd cook immediately, as soon as defrosted. Thats my rule, others may disagree..
