Baking without butter

Options
Desperately trying to find any good resources for using non-dairy oil/fats when baking.

Can anyone point me in the right direction or even just single recipes which they can vouch for from personal use?

    I use coconut oil.

    I do a courgette chocolate cake with no oil/fat/butter.

    Very moist, very scrummy and no, you cannot tell it's got courgette in.

    Is it just non-dairy or non-fat you want?

    I used either sunflower marg (think the one from tesco is lactose free but check the labels as it may have changed) or the pure range or soya or sunflower. Just replaced them ounce for ounce for normal marg. cakes always turned out fine :)

    What kinds of things do you want to bake? What kinds of fats do you want to use? I usually just use dairy free margarine in place of butter in all recipes and it works fine. Some vegan recipes use vegetable oil as the fat and they work well too.

    Quite a few American recipes use oils instead of butters.

    Various cakes and buns, particularly spice buns which I love.

    I can vouch for these two recipes, they are part of my regular baking repartoire, they both use sunflower oil

    Carrot Cake

    I replace 40g of the dried fruit with walnuts and don't bother with the orange zest, I find it leaves an aftertaste



    Chocolate Muffins

    They do contain milk though, would that be ok?
    With these I put 180g flour and 45g cocoa and 85g caster sugar and 30g muscovado for a richer flavour.

    my son was dairy intolerant and I used to adapt recipes this way.
    for sponge cakes - find an 'all in one recipe' and use olive oil spread.
    Muffins - I have a sunflower oil recipe which works really well - If you would like it just let me know and I will dig it out for you.

    instead of ice cream I would make sorbets - very easy and everyone loved them.

    pastry - I found that Trex made really good pastry and unless they have changed the format doesn't contain any dairy. if they have then lard will make a decent pastry.

    some olive oil spreads don't contain dairy - read the info carefully and make sure it doesn't contain lactose, milk solids or caseinates.

    After eight mints didn't contain dairy when I used to buy them for dairy intolerant son - BUT - always check info - especially if packaging says 'New or improved recipe!

    Neither did Jaffa Cakes! for years the only biscuit son could eat!

    I am rather assuming a dairy intolerance here - rather than gluten or nut allergy! is this the case?
