If it were me I'd have a Tbone steak with nice big chunky chips, peppercorn sauce, and roasted challots or asparagus etc etc.
But as this is for mthers day I think it needs to be a bit more refined.
It's still a steak. Lovely 40 day matured 1.5" rib eye from the local slaughter house. Thats what she chose as it's her favourite but is expensive hence why it's a special dinner thing.
Going to pan roast it with oil, herbs, a smidge of garlic rubbed in, and seasoned. The question is what to put with it. Big chunky chips don't feel right to me.
I've got a recipe for a crusty crumbled blue cheese topping which I might try, and my wife loves griddled asparagus and baby corn so one of them will be on the plate, but what else.
I can't just serve steal, blue cheese and asparagus.
Help needed and greatly appreciated.

Me 3 :-)
Sounds lovely0 -
Asparagus will be very expensive and not especially nice this time of year; personally I love purple sprouting broccoli - wonderful flavour, so would serve that instead.
You could add celeriac to the dauphinoise potatoes.
One of my favourites (though you may feel there are too many competing flavours) is pureed curried parsnips - i usually add apple & cream - I especially like that I can make it well in advance, and either keep hot (covered in foil) or quickly microwave.
Not cheap, but grilled tomatoes, or roast baby ones always seem to complement steak.
Sounds lovely, lucky mum!0 -

I'd do wok fried red/green/yellow peppers, quartered mushrooms and onions and baby tomatoes.
Goes a treat with steak and parmesan, garlic mash.0
