Making up meals and freezing! Help please.

Am always pushed for time and always one for BOGOF's. Currently have LOADS of tuna & chicken breasts! Just wanted some advice on what does doesn't freeze very well!

Usually mix up tuna, mayo, cucumber, tomato, pepper and take that to work for lunch. Can i do it in bulk and freeze to save me time? Or will some of those ingredients not freeze so well?

Another fave is similar to above but with chicken.

And another - Some sort of mince concoction along the chillie/spag lines.

Hope someone can answer...as I have the evening free and want to put it to good use in the kitchen!

Or any other ideas on what to do with bulk cooking & freezing!

    I'm not sure but I don't think that mayo freezes *that* well - also the cucumber, tomato and pepper will probably go a bit squishy once it thaws. You could cook the chicken and freeze it in portions, and then defrost it and add the mayo etc, but again I wouldn't freeze it with the mayo and veg.

    Things like spag bol, chilli etc do freeze really well though, as long as you stick to the rules and only ever freeze meat once when it's raw, and once when it's cooked.

    There are LOADS of bulk cooking and freezing websites - just google things like 'once a month cooking'. You'll have to scale down some of the quantities, but there are lots of great recipes and it's a great way of researching what freezes well and what doesn't!

    Tomatoes, cucumbers, mayo won't freeze. The veg will be mush when defrosted and the mayo will have separated.
