I was brought up on freshly cooked meals - both my parents are great cooks. Now I'm at uni, I find it really hard to eat the same way as I'm not great at cooking and it seems pointless to spend ages cooking just for me... which may sound silly. I do however eat lots of fresh fruit and veg
I try not to eat a ready meal every night but more often than not, that's what I have for my tea

That's exactly how I feel - about cooking just for me, I mean. Often I think, what's the point? However, I motivate myself to make something really nutritious or just plain nice and over-cook so I can freeze 3 out of 4 portions. Then, it's just like getting a readymeal out of the freezer, but at least I know what's in it and how long it's been made.
One of my favourite recipes is a farmhouse chicken casserole with parsley dumplings. It feeds 8 and the dumplings are delicious. It's all cooked on the hob so only one pan to wash up (um, and 7 Tubb-its or similar), and it freezes really well and once defrosted can be reheated in the microwave.

Quick easy tea tonight as DS1 has spent much of today in softplay areas at parties ... giant yorkshire pudding each (homemade), filled with mince, gravy, peas and sweetcorn. Took about 15 minutes to get together, 40 to cook, delicious, gave me the chance to do a few jigsaw puzzles with the boys at the same time.That's Numberwang!0

Hi what do you use to cook your giant yorkies in please? I've nailed the batter and got making the little ones down pat but dunno how to do a giant one and we used to love them (when we bought ready made) with sausage, mash and gravy in. you can get 4" yorkie pans in poundstores, I've seen them before tho I dont' have one local to me.0
