this one happened with 'leftovers weekend'
3 large carrots - diced
1 large sweet potatoe - diced
half a bag of red lentils (small bag)
half a red chillie ( or some chillie powder works too)
1 veg stock cube and a kettle full of boiling hot water, salt and pepper too taste ( bacon optional)
put all ingredients in a large pot, cook for good half hour, mash with potatoe masher, then dish out hmmmmmmmm
even better the day after
made the same soup this weekend but had to bulk it out with a handful of rice and a potatoe due to lack of veg , but was yummy anyways
