Delicious Moroccan Lentil Soup recipe

I made this soup for lunches this week - it is easy, cheap (if you cook indian and have spices) and divine!

Moroccan Lentil Soup

Serves: 6
  • 1 tablespoon olive oil
  • 2 onions, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon grated root ginger
  • 1.5L (2½ pints) water
  • 200g (7 oz) red lentils
  • 1 (400g) tin chickpeas, drained
  • 1 (400g) tin cannellini beans
  • 1 (400g) tin chopped tomatoes
  • 3 carrots, diced
  • 3 stalks celery, diced
  • 1 teaspoon garam masala
  • 1 1/2 teaspoons ground cardamom
  • 1/2 teaspoon ground cayenne pepper
  • 1/2 teaspoon ground cumin
Preparation method

Prep: 20 mins | Cook: 1 hour 45 mins

In large pot, saut! onions, garlic and ginger in olive oil for about 5 minutes.

Add the water, lentils, chickpeas, cannellini beans, tomatoes, carrots, celery, garam masala, cardamom, cayenne pepper and cumin. Bring to the boil for a few minutes then simmer for 1 to 1½ hours or longer, until the lentils are tender.

3.
Pur!e half the soup in a foodicon1.png processor or blender. Return the pur!ed soup to the pot, stir and serve.

    Is that just copied and pasted from another site? If so that may not be allowed. looks yummy though :)

    this one happened with 'leftovers weekend'

    3 large carrots - diced
    1 large sweet potatoe - diced
    half a bag of red lentils (small bag)
    half a red chillie ( or some chillie powder works too)
    1 veg stock cube and a kettle full of boiling hot water, salt and pepper too taste ( bacon optional ;))

    put all ingredients in a large pot, cook for good half hour, mash with potatoe masher, then dish out hmmmmmmmm
    even better the day after

    made the same soup this weekend but had to bulk it out with a handful of rice and a potatoe due to lack of veg , but was yummy anyways :)
