I really want to cook this for Sunday dinner tomorrow, but I won't be back in time to leave it in the oven long enough.
What would happen if I cooked it today and chucked it in the fridge? How would i Reheat it to keep it tender?

Probably be nicer on the reheat. Just make sure there is plenty of juice/gravy/sauce so it doesnt dry out, cover & make sure it is piping hot second time round.0

Do you have a slow cooker, if so Mortgage Free in Three (google it) has a fabby recipe on her blog for Pulled Pork, look back through the recipe tab, it is really tasty, I am on the look out for YS pork joints now. I froze quite a lot of it to re-heat in stir fries too.The best thing about the future is that it comes one day at a time. (Abraham Lincoln)0
