carrots, rosemary +? Help!-slightly urgent

Saw a programme yesterday -no idea what channel- where Gary Rhodes cooked carrots with rosemary & 'something'!
I just found out a friend & my BIL are coming to dinner tomorrow & thought that these would be lovely with the Gammon we had already planned! But I cant for the life of me remember what the 3rd ingredient is or quite how he cooked it?!
I'm sure one of you OS'ers will know the recipe or can suggest something similar!
I had no joy searcching on the BBC food website btw

Have seen a nice recipe with these + honey / maple syrup roasted - v. lovely - this is one recipe I've found online http://www.cdkitchen.com/recipes/recs/340/Oven-Roasted-Carrots-and-Parsn79476.shtml - can't vouch for it I'm afraid as not tried this particular one but it sounds pretty much like what I do when I make this. Good luck!

That sounds lovely kittycat07 & its similar to what I sometimes do too, but the recipe I'm thinking of almost had a sauce & used just carrots as the veg:confused:

It wasn't vanilla was it? I'm sure I've seen Gary Rhodes cook carrots with rosemary and vanilla somewhere.

    Was it his Vanilla-Rosemary carrots?

I don't have the recipe but it is in his book "Cookery Year Spring into Summer.
My first reply was witty and intellectual but I lost it so you got this one instead :D

There is a recipe where he uses sugar (always put half a teaspoon in it keeps the colour of the carrots) and butter gives it a shiny glaze. I think he is one of the chefs who says don't use more than three herbs and spices!
Just been and got one of his cookery books and it says the juice of one orange, thyme and honey. It also says butter to coat and sugar as I said above and a shallot. (also can add a slosh of white wine to reduce in the water you cook the carrots in.

You can slo whizz this up to make a carrot butter sauce!!
