Gingerbread man recipe without bicarb?

I've been searching for a recipe to make gingerbread men but all the recipes I've found use bicarbonate of soda but I find I'm a bit sensitive to bicarb & also baking powder (making my tongue react to it) but I'm OK with self-raising flour.

Has anyone tried to make gingerbread with self-raising flour but no bicarb? I thought I'd ask here first before I potentially waste my time and ingredients making a batch.

    Self raising flour has baking powder in it, so you'd probably have the same problem.

    OP, I follow this recipe - really simply but yummy.

    I mix it in a food processor and it does look a little bit dry but the warmth from your hands does soften it up. Last time I made it I added a touch for golden syrup and a teeny bit of water as it wasn't coming together - but I'd used cold-ish butter and the kitchen was quite chilly, I just had a real hankering for some gingerbread so wasn't as prepared as usual!

    Thanks, but as I said, I'm OK with self-raising flour. It doesn't affect my tongue, not like bicarb, citrus fruits, tomatoes & granny smith apples. I don't get ill with them they just make my tongue uncomfortable. Shop bought scones are the worst so never touch them!
