Lentils

  • Sorry, too new to post a link but if you search herbed puy lentils on Waitrose it brings up a recipe. Basically cook puy lentils in stock, some herbs and garlic (bit of dried chilli?) and then serve as side dish.

I quite often cook puy lentils like this and then have them cold the next day with roasted veg and/or goats cheese as a salad.

I had lentils in an Italian once served with fish, I had never had them before but they were yum. Anyone know how you would cook them as a dish like that, is instead of potatoes or other side dish?

Are these the sort of recipes you mean? I love puy lentils with fish and either spinach or cabbage. Puy lentils are also good in salads or with chunks of fish and roasted med veggies added.

Fab, I had no idea there was so many lentils will look out for puy ones :-)
  • When Sainsbury's were selling sachets of Merchant Gourmet puy lentils at half price, I was tempted to try one. I got the one with sun-dried tomatoes. It was delicious but oh so expensive to buy when full price. So once I got the idea I now make my own up to serve as a side dish. I didn't know what I had been missing all these years!!

Lentil soup or stew is a favourite here. Even my 7 year old loves them
  • i have made a pot of Seraph123's spicy lentil & tomato soup this morning
    Oh myyyyyyyyyyyyy
    its delish!

    totally recommend it
    thank you!
  • I adapted a WW chilli lentil bake recipe which is amazing. Even my hubby loves it and he's a die hard meat eater! WW's recipe includes 2 jars of their own brand chilli cook in sauce - why would you? That's got even more fat and calories than hm chilli.

    • Fry onion, garlic and chilli in olive oil until soft
    • add half a bag of red lentils straight from the packet and a tsp of ground coriander and fry for a couple of minutes
    • add a tin of chopped toms and a carton of passata. Fill the passata carton with cold water and add that too.
    • bring to the boil, cover and simmer for 30 minutes
    • spoon into a overproof dish and top with a mix of mashed white and sweet potato - or just sweet. But I think the addition of white potato makes it more substantial.
    • top with as much grated cheddar as you like and bake in the over until the cheese is crispy. We've also tried it with grated mozzarella and that's even better!
There's enough there for at least 6 portions and it tastes even better second time around! You can also freeze it - do this before adding the cheese. Be warned though, it takes at least an hour in the oven from frozen.
  • buying lentils of any sort is generally cheaper from an Asian shop or 'ethnic' sections of bigger supermarkets. Anything over £1.50 per kilo for plain red lentils is expensive :)

If you like 'Indian' food then lentils (Dal) are going to make you very happy
