Hi there,
I am following a recipe which calls for Italian Sausage. I have regular sausage in, but what makes it "italian"? Can I flavor it in some way? Is Italian sausage spicier, sweeter etc?

Is it an American recipe? What gets called Italian Sausage in the US is a (tasty) sausage with spices - usually garlic, fennel seed or anise, and chilli flakes.0

I would use garlic and paprika

Substitute a herby, robust flavoured sausage like Cumberland or Lincolnshire. Italian sausage in the US usually has fennel seed, I'd add a pinch of (ground) fennel seed - it's also lovely in meatballs. They also usually mean crumbled sausage, so you can use sausagemeat or just take the sausages out of their casings.2015 comp wins - £370.25

As above - fennel is normally the thing used to give it a bit of a difference to normal sausages. Mr M does a pack of fennel & chilli Italian-style sausages. We tried those the other night in a pasta bake and they weren't bad - rather similar to those eaten at a meal in a restaurant at Christmas.
