Faking Italian Sausage

Hi there,

I am following a recipe which calls for Italian Sausage. I have regular sausage in, but what makes it "italian"? Can I flavor it in some way? Is Italian sausage spicier, sweeter etc?

    What is the recipe? Would an standard sausage not do?

    Is it an American recipe? What gets called Italian Sausage in the US is a (tasty) sausage with spices - usually garlic, fennel seed or anise, and chilli flakes.

    Substitute a herby, robust flavoured sausage like Cumberland or Lincolnshire. Italian sausage in the US usually has fennel seed, I'd add a pinch of (ground) fennel seed - it's also lovely in meatballs. They also usually mean crumbled sausage, so you can use sausagemeat or just take the sausages out of their casings.

  • As above - fennel is normally the thing used to give it a bit of a difference to normal sausages. Mr M does a pack of fennel & chilli Italian-style sausages. We tried those the other night in a pasta bake and they weren't bad - rather similar to those eaten at a meal in a restaurant at Christmas.
