Most interviews now are sorted by email and telephone, possibly with a letter to confirm, if there is sufficient time to send it.
I always ask for a covering letter and CV, and prefer it by post. If you put up an email address, people who are required to apply for a number of jobs per day (regardless of their ability to do it) tend to just send you blanket applications. It takes time to winnow them out. Doing it by post means that people have to take time to apply. It also gives me an idea of their ability to correctly format a letter and follow a simple instruction. Even then, I got over 150 replies in six days.Some days, it's just not worth chewing through the leather straps....
