prep ahead veg

I used to work in a kitchen when I left school and I remember the chef prepping (chopping / peeling) potatoes, carrots, onions for the next few days and storing them in the fridge in plastic containers. The potatoes and carrots were covered in water. I can't remember how long these were kept in water to be honest I guess 2 -3 the most before they were used.

I am tempted to do something similar at home for use during the week, cuts down on prep when cooking supper etc.

Does anyone do this, and how long do you think you can keep the veg for, also for me I am concerned as to whether there is any taste difference or whether the vitamins and minerals are leached into the water? any thoughts.. thank you

    Hiya, I prepare the fresh veg the same day I am going to put it in the steamer, casserole, etc.
    If I was using advanced prep like you say, maybe the night before?

    Could you cook frozen veg?
    The secret to success is making very small, yet constant changes.:)

    I don't see any reason why you couldn't do this if you want to.

    If I did this I would keep them for 2-3 days. Another way and a certain no waste method would be to prepare your veg and freeze in freezer bags. Then just use what you need.

    When I prepare my pet's veg in advance the carrot seems to dry out quite quickly (i.e. overnight) - would this be why the chef kept them in water? If so will give that a try!

    I think that you would retain more vitamins etc by preparing and freezing and then cooking from frozen. Not raw potatoes, only cooked ones. I know that starch comes out of soaked raw potatoes.
