Savoury pancake recipe

Hi peeps,

A little help needed please, I really fancy making savoury filled pancakes as well as sweet ones on tuesday, has anyone got any nice easy recipes.

One of my very favorite suppers of all.

I very fill my pancakes with very lightly cooked spinach and ricotta, roll them up, and put them in an oven dish. Then I make a very some sauce of onions, celery, carrots fried in a drop of olive oil till soft with herbs, a clove or two of galic,(flavours depend on my mood, but usually things lie, oregano or basil) then a tin of tomatos. I pour this over the pancakes and then add a small amount of grated cheese...depends what we have, a small amount of grana is usual here, then put in a medium oven till cheese melted. It can be prepped a head because of the reheat (but I keep the sauce separate till putting in the oven). Its very peasanty simple but delicious.

A lovely one is loads of cooked chopped spinach (frozen works well and makes life cheaper) in the batter then fill with mushrooms in a white sauce flavoured with cheese/tarragon/wine or similar.

I like chicken with fried onions and mushrooms as a filling, topped with a creamy mushroom sauce.
