cake recipes please

My son had cooking yesterday but due to a dentist appointment he didnt get to make it at school but i now have a cupboard full of ingredients and he has promised his teacher he will make his victoria sponge cake at home instead question is i have looked on google and all the ingredients vary so much i'm confused lol.

The school had wrote down
150g self raising flour
150g caster sugar
150g margarine
3 eggs

I have brought the sandwich cake tins and cream and jam for the filling.

Can anybody give me an accurate and easy way (haven't made cakes in years) to make one i also have some small cake cases and some cocoa powder aswell as golden syrup could i make some smaller cakes using all the ingredients.

    Do you have soft margarine in a tub or the block stuff?

    If you have the soft stuff you can bung all the ingredients in a mixing bowl and mix them all together with a food mixer-takes a few minutes-mixture should end up pale yellow and look creamy.

    If you have block marg it's better to make a Victoria sandwich the traditional way. Cream the marg and sugar together until pale and creamy. Add beaten eggs a liitle at a time. Then fold in flour.

    Divide mixture between two lightly greased sandwich tins-if you have any it's best to put a greaseproof circle in bottom of each tin.Bake for 25-30 mins in moderate oven-gas 3-4 or electric 325-350.

    This mixture can be used for buns-bake at 350-375 or gas 4-5 for about 20 minutes.

    If you want to make chocolate sponge subsitute 1 oz cocoa powder for 1oz flour.

    Ditto the above.

    I usually weigh my eggs and then use equal amounts of the other ingredients.
    cream butter & sugar with a wooden spoon, beat in eggs and fold in flour with a metal spoon.

    If the mixture starts to curdle i.e. if the eggs have been put in a bit too quick, add a spoonful of flour and beat like mad.
    Also, if you have a fan oven, don't forget to reduce temperature by about 10%.

    Thanks all it didn't go too bad the kids have both tried some and say its lovely only thing that puzzled me was that the sponges didnt seem to rise very well do you think i should use more flour next time and if so how much i used 150g.

    all in one sponge

    100g soft marg
    100g sugar
    100g self raising flour
    2 eggs
    1 level tsp baking powder

    180oc 2 x7 inch tins or does 18 fairy cakes

    beat all two mins, divide between 2 tins or paper cases, bake 25-30 mins

    the baking powder should help the cake to rise

    It is really great to hear of schools teaching boys to bake!

    And thanks Rikki for the tip about weighing the eggs - I always wondered about that. BTW that is exactly my grandmother's method, down to the metal spoon to mix. I had forgotten it till I saw it, brings back lovely memories, thanks for that too!
