Uses for a soft-leaf lettuce

Can anyone give me any ideas of what to do with the enormous (10 inches across :eek:) soft-leaf lettuce I got in my veg box yesterday? I'm not a great fan of salads even in the middle of summer and can't summon up any enthusiasm for them on a cold, damp February day, and I really can't think what else to do with it. I've found a few recipes for cooked lettuce but they all seem to be for cos-type lettuce rather than the floppy type I've got.
Any ideas, please?

Just treat it like spinach, blanch and season well .0

If I have leftover salad leaves, or ones that are going a bit wilted, I roughly shred and chuck into stir fries or chop and throw into casseroles where it just looks like herbs. I'm not sure if anyone has noticed it is lettuce!Love and compassion to all x0

I second the soup option! Have made chilled lettuce soup in the summer and it's scrummy hot too!If you're not hungry, food isn't the answer!0

You're brilliant - I knew I could trust the OS community to come up with some good ideas! I'd never thought of making lettuce soup, so that's now on the menu for work lunches next week, and the rest can go into casseroles.

Sweat some thinly sliced leeks until soft, then dump in a tin of white beans (canellini, borlotti, etc) and heat for 5 min until hot through. Add in a dressing of 2 tbsp dijon mustard to 1 tsp of wholegrain mustard, 2 tbsp oil and 1 tbsp cider or wine vinegar. Add salt & pepper to taste, pour over leeks and beans. Then put this overtop of torn lettuce (tear or chop into bite-sized pieces). Very good!:A Thanks to all the lovely people who contribute their advice! :A0
