Hi
It's my boyfriends birthday next week, and I want to bake him a cake to take to work next week, does anybody have any good OD cake recipes, that doesn't require me spending a fortune on ingredients. I have the basics in my store cupboard. The cake should ideally serve 10-12 people, and can be a large cake or small cupcakes/muffins.

Basic sponge = 50g sugar, 50g fat (stork etc), 50g SR flour per egg. I would use 3- 4 eggs to serve that many.
Oven will be about 180- gas 4-5 and depending on tins, that will affect time.
I made a cake this week for OH, adding about 40g of cocoa to a 3 egg mix then used more cocoa, icing sugar and butter to do buttercream (no idea of qunatities, probably about 75G butter)0 -
What about 'Overnight Cake'? traditional to Wales its delicious and quite easy to make and even I have all the ingredients in my storecupboard.
you need
200 gm Plain flour
100gm butter
100 gm caster sugar
100 gm mixed dried fruit
teaspoon cinnamon
teaspoon ground ginger
half teaspoon bicarbonate of soda
1 tablespoon vinegar (white or brown - doesnt matter)
milk
method
Sift the flour and spices together, rub the fat into the flour as for pastry. Stir in sugar and dried fruit. Add enough milk to give a soft dropping consistency. Dissolve the bicarb in the vinegar and stir into the cake mix. Leave to stand overnight. Pour the mix into a cake tin and bake at 190C 375F gas mark 5 for about an hour - test with skewer and if not cooked give another 10 to 15 minutes.
oh - in Welsh the cake is called 'Teisen Dros Nos'!0
