Thanks for your help Keth...having done the conversion, we seem to be both paying around the same for flour, which reassures me that you do, in respect of flour get what you pay for. The bread is very good, may try not using the breadmaker for a while, but I hate that gooey kneading which seems necessary, at present I get best results by making dough on pizza setting and then knocking back and shaping as I want, leaving to prove and baking at about 180c in a fan oven.
Will have to play around with things for a while as I like my bread!

Hm. I actually read an article by a baker once who said that kneading wasn't strictly necessary. now where was it.. hmphf.. :mad: can't find it. I did a search on "is kneading necessary" and found this recipe, which you may like to give a go - if you do, let me know how you got on. I like kneading - as i wrote on the blog, i just put some music on and knead away to the beat, and let my mind wander.. its never been a problem. Still another page reckoned kneading was crucial for helping the gluten to stretch or somesuch, so i dunno. is it possible to set your breadmaker to make the bread (according to my recipe), knead it, and then stop after that so you can take the dough out and do the rest yourself in another bowl? that may be a way forward (you can tell i don't know much about breadmakers).

kethry - just wanted to say thanks my bread was scrummy and i have to say i loved making it - and seeing the end result was very satisfying!! my tin was perfect i did one in the tin and a round loaf on a baking tray - thanks again for all your help and for sharing the recipe0

you're very very welcome, sweetie - glad it came out so well!! I did some bread rolls today so i'll be posting on the same page probably tomorrow, with photos the how-to of making rolls if you want.

hi had a bit of a problem with these - i did use all white flour so that might be it but when i reread your link today i don't think my kneading is too successful
when i leave the dough to rise the first time - it doesn't look glossy and isn't very easy to knead, also it doesn't all go together in one bit but has - so its not so pliable - could it be not enough water? and rubbish kneading?!!
