    Glad to hear you've got things sorted. But the mention of bacon in bagels has made me hungry now :(:rotfl:
  • One of my most favourite things when I used to be vegetarian was nuts and I'd use them in cooking. One of my faves was nut roast.

    Find out what nuts she likes and get lots in and fruit, maybe she likes dried fruit - there's so much you can make meals wise from those ingredients.

    Does she like cous cous or other grains like that?

    Just look up some veggie recipes online - there are loads.

    Don't forget to look up the vegetarian society (if it still goes by that name!) - they'll have loads of recipes.

    Just throught for breakfast how about vegan pancakes?

    200g self raising flour
    200ml water
    Half teaspoon mixed spice

    mix all together into a batter and make like normal pancakes.

    porridge, toast, cereals.

    lunch / main meals

    Or how about calzones (folded pizza)
    Say have a filling of tomatoes, veggies, maybe cheese? meat?
    Or this is i sometimes do, make a white sauce, add some spices and mustard power and use that as filler.

    risotto with peas?
    pasta, tomato sauce with mushrooms and oregano
    spicy bean loaf, roasties and veggies
    toad in the hole
    spicy bean hot pot
    veggie stir fry with rice / noodles
    cauliflower / broccoli bake
    chick pea curry
    falafel, wraps, salad, crisps and dips (that way she can pick what she likes)

  • Sounds like you've managed well!

    This gave me flashbacks to a Sunday lunch I did where there was me, friend 1 (no wheat, dairy, celery, or mashed potato), friend 2 (vegetarian, no mushrooms or celery) and friend 3 (vegetarian, no potatoes)

    There is a veggie shepherd's pie on bbc good food which worked for this group - i just skipped the cheese topping or you can use a vegan 'cheese'

    I think I said in the first post, she has special pills she can take to help her digest lactose.

    Also, you can get pesto with no cheese in it!

  • If they haven't helped the situation by letting you know what she does like I would just cook something and if she doesn't like it then that's just tough really. Maybe after that she might be more forthcoming with what she does like. Fussy eaters, pha!
  • There are loads and loads of veggie soup recipes - they might be a good option for lunches.

    Fruit for breccie's

    not sure I can add much to what's been suggested already for dinners.

    Sounds like you have a tough job - good luck.

    Any chance she eats any fish? (I know some veggies do!?)

    Edit: maybe a nice bean stew or casserole for dinner?
