Don't panic, make a crustless quiche with some of them, chop up bacon, onion, cheese, peppers, tomatoes, some olives, ham, mushrooms (any combination of any of these or anything else suitable that is lurking in the fridge) and make exactly what it says in the name, butter an ovenproof dish large enough for as many eggs as you are going to use. Put the optional ingredients into it, whisk as many eggs as you are going to use with some milk, cream if you have it (soft cheese if it is available) seasoning and pour this over the bits and bobs in the dish. Pop into a pre heated oven 180Fan/ 200C conventional oven and cook until golden brown on top. It's nice hot and nice cold and keeps for 5 - 6 days in the fridge, Good Luck, Cheers Lyn x.0

Hi, thanks, but i forgot to say my freezer is full to bursting. I cant fit anything in. I will have to make egg sandwiches for lunch tomorrow and have another omlette or scrambled eggs for tea tomorrow night!! what a waste.0

You could have a big baking session, they will last until tomorrow in the fridge in a bowl covered by cling film. Use 2oz of flour sugar marg to every egg, put all together into mixer and beat until pale [all in one method]. You can then divide the mix and add chocolate, ginger with a tablespoon of syrup, coffee, alternatively, add date and walnuts, or mixed fruit [add another tablespoon of flour for this]. all these cakes keep at least two weeks in an airtight tin. You can also use this mix to make individual steamed syrup/jam puds, once cooked these keep in the fridge for again at least two weeks. Hope this helps0
