Hi Folks
I'm making Red Cooked Pork in the slow cooker today and the recipe says to use, 150ml chinese rice wine, and 1 tbsp rice vinegar.
As I don't have either, can I use alternatives instead? I think I have some Balsamic and some Red Wine Vinegar and some Cider Vinegar in the cupboards.

Do you have any sherry? That would probably substitute for the rice wine. For the vinegar, I'd probably use the cider vinegar, or possibly the red wine vinegar, but NOT the balsamic.NSD May 1/150 -

According to my chinese cookery book, cider vinegar can be used instead of rice vinegar.0

and as said before - sherry (especially dry) is a good substitute for rice wine, I always use sherry as its not easy to get the rice wine!0

Can I jump into this thread and ask about how long you can keep open bottles of this kind of stuff? I buy them periodically for a recipe then forget all about them and then I get nervous about using them after a few months!0

Till it runs out in my case. Could be years. If it is an alcohol/vinegar esp.Opinion on everything, knowledge of nothing.0
