You can't beat a good old bit of history to go with the recipes.
How women invariably cooked is a fascinating subject and some of the ideas featured were well ahead of their time, or trendy now like wood fired ovens.
Jane Grigson, Elizabeth David, Claudia Roden though they don't sound very MSE have some very MSE History with believe it or not recipes that are MSE!!!!!!!#TY[/B] Would be Qaulity MSE Challenge Queen.

English, Scottish and Welsh meats are to be prefered to foreign imports with dubious provenance.

Lovely pigs CTC.
We used to have a brilliant butcher. He had a blackboard up which had the names of the farmers and farms the meat came from and his FR chicken cost the same per kilo as Tescos broiler chickens.
Unfortunately, he had to close due to ill health, so we now buy from the farmers markets in Cardiff and Cowbridge or order online.
We've bought excellent meat from Rosewood Farm in Yorkshire including a super bargain pack of pork for just £15 (was half price because they were clearing out their freezers!) which included sausages, burgers, loads of chops and a ham hock.
We've also bought half a pig from a small producer and could specify how we wanted it butchered.
We also go to the food festivals and stock up on the more hard to get meat such as mutton or goat.
I actually don't eat meat, (haven't done for nearly 40 years) but the rest of the family do and we like to know that the animals have been well cared for, and that we're helping small producers.
We did look into rearing our own pork, but hubby's had a pay freeze for the last 3 years, so money's tight. Mind you, since getting ducks, hubby can now no longer eat duck and I could see the same thing happening if we got pigs! :rotfl:0 -
I heard a food writer sum up totally what tesco is and to an extent other supermarkets
Tesco`s is an Industrial Supermarket selling Industrial Food
It derives most of it`s food this way....have a look at the frozen prawns that come from thailand, the salmon from farmed salmon farms...the chicken from non EU countries...it`s industrial..to maximise profit...not the welfare to an extent of it`s customer base...okay if you have to shop in Supermarkets research what your buying if your concerned, and yes if we do want better we do need to support the independent
And due to cutbacks the testing of alot of processed food /meat will be relying on the Major food producers...you have been warned

It is hard not to get attached to the pigs, but we make sure we buy white weaners, so they all look the same:rotfl::rotfl::rotfl:
food adultery has been going on for centuries, ok it is %%%%%% better now than it ever was, but there will allways be some sort of food scare etc..
The only way you can 100% know what is in your food is to grow/rear it yourself, but this is physically impoosible for someone to be 100% self sufficient...so we just got to use our common sense, and our gutt feeling when it comes to food, suppliers and productsWork to live= not live to work0 -

Im concerned about bread and other nasties.
wondering how i avoid them and buy things as pure as possible.
Have a read up on the Chorleywood bread process, it was shown on tv a while back, huge amounts of additives go into bread to make it quick and cheap to produce.
I make all my own bread with organic flour and it works out really cheap.0 -

I really think this is important. Over on another MSE forum I've been grumbling about people I know who have wood burning stoves and yet haven't a clue how to use one safely and efficiently. The same goes for cooking. What has happened to us when most people don't know how to a light fire to warm themselves, or cook a simple, nutritious meal from basic ingredients?
Mothers should teach their children how to cook (sons as well as daughters!) and schools should be teaching at least the basics of how to look after ourselves.0
