Lemon and Sultana Cake

I've got a bit of a fancy, does anyone have a good recipe for a lemon & sultana cake? I've got most ingredients in stock so should be able to give any one a go.

I could probs put more lemon zest in to make it more tangy

i think that the dried fruit plumps up when its left to soak overnight and would imagine make the cake a bit more moist0 -

I would go for the second recipe. The first one looks like too much faffing around with tea towels and tin foils, which makes me wonder if its more of a pudding than a cake.0 -
I like the look of the second one I daresay you could adapt it to apple and sultana as well.I love apple cakeand used to make it years ago for my late OH with lots of chopped apples and I would top it with a squirt of honey instead of sugar0

I think I'll go for the second one then and zest it up a bit. I don't think I'll plump the sultanas though, cake usually lasts through the week here, they might go a bit soggy by Wed/Thur, maybe.
I might even throw in a few walnuts and do the honey glaze Jackie suggested. Oh yeeeesss, that would be delish.
