  • It will mean spending a bit off money to get it but I got meat free Monday cook book for Xmas. Full of wonderful recipes and gives you breakfast, lunch and dinner with a side and pudding for a day. It is also split into seasons. Highly recommend it. It is by Paul McCartney and his daughters

    We eat quite a lot of vegan / vegatarian meals. My eldest he's 12 and partner are obbessed with meat.
    My youngest isn't that bothered but adores seafood, past and rice.

    On the grocery thread they are quite a few veg based meals so i would have a look on there.

    I tend to use pulses as substitutes.

    Brown lentils tend to have more a meatier taste than red lentils if that makes sense. I use them quite a bit in stews and generally no one notices thats there no meat. They do take longer to cook than the red but they are quite nice.

    I use them in stews, soups, anything really

    sometimes i add beef stock cubes to add a meaty seasoning.

    what about meat loaf made out of mixed of kidney beans, lentils, breadcrumbs, seasoning, all blitzed up and baked in a loaf try.
    Its looks like meatloaf but without the meat.

    Just don't announce it as this is a meat free dish, as straight away
    your open to complaints. Trust me i know :o
    I do this and then when we do have meat days no one really pays attention to it.

    Or what pasta bakes like macaroni cheese? No meat but very filling.

    If you like curry, a tasty & inexpensive dish is vegetable curry with rice. You can put potato, butternut squash, & haricot or butter beans in the curry, and for some extra texture, a few unsalted cashew nuts. I you want poppadums with it, a quick & easy way of doing them without oil is to cook them on high power in the microwave for around 60 seconds. They will curl up instead of staying flat, but that doesn't matter.
  • what about veggie lasagne? I roast a peeled and chopped butternut squash, onion, a few carrots, couple of peppers, sometimes courgette. season with salt, paprika and oregano (or mixed herbs) and a spoonful of oil. Roast until everything is tender then break up a bit with a fork or masher. Mix in a couple of peeled chopped tomatoes and a little water or stock if it looks a bit too dry. It does need quite a bit of seasoning too.

    Use in layers with cheese sauce and pasta sheets for lasgana or roll into par-cooked pasta sheets for cannelloni with tomato and cheese sauce over the top.

    Also chickpea, cauliflower and peanut is a good combo in a curry - gives it a few different textures

    Not cheap but very tasty.

    Mix some breadcrumbs and grated cheese with some cumin/coriander and chilli.

    Slice and cook an aubergine and a couple of courgettes and layer them with the cheese/breadcrumb mixture then bake in the oven.

    Served topped with soured cream and grated carrot.
