    I bought one from Carluccio's the other day, lasted a few days :D so decided to try making one (well two I will send one to our daughter tomorrow).
    I found several recipes (some have cocoa powder), this is a Channel 4 recipe, I made a circular and a Heart shaped one today, it was about 1/3 deeper and bigger overall than the one I bought and much more coarse as I left the nuts whole.
    I used Hazel Nuts, Blanched Almonds, Pistachios & Macadamia nuts (overall quantities as per the recipe but 80g of each), then I used Dates, Figs and Candied Peel.
    You have to be quick with the sugar mix as it goes thick really quickly (I used my hand to push the mix down in the tin).
    (I lined the bottom of the tins with Rice Paper rather than parchment - the one I bought had rice paper on the bottom).
    Everything has its beauty but not everyone sees it.

    LameWolf; I made your nut roast today, just had a slice with dinner and it was yummy. The other slices have gone into the freezer as suggested....many thanks.:)
