Muffins

Well ... I've made my 1st ever batch of muffins today :j (I'm not a good baker:o)

They've actually turned out pretty nice :o so will def be trying again!

Anyway, I'm sure I've seen some people say they freeze them for use in lunch boxes etc

Can I ask a couple of questions....


Do you just freeze them in their cases or do you put them in a plastic bag / cover them?

Also, do you just take out & let them defrost in the lunchbox or defrost them before putting them in?

(I hunted for the freezing thread but couldn't find it:o)

    I would freeze in cases but sometimes they come off when defrosting - but I would put them into a freezer bag or box inside the freezer.

    I wouldn't bother defrosting for lunchbox unless you wanted to frost them first.

    If they're savoury ones & contain courgette, that might make them a bit watery so may be better in a bag within lunchbox.
  • Like Chris25, I freeze them in their cases.

    They tend to go in individual small freezer bags (or just sandwich bags - which are cheaper and not so thick as freezer bags since they don't tend to stay in the freezer that long!).

    Take out when you pack up your lunch and the cool cake keeps the sandwich fresh in the summer - if we ever get another summer.

    Haven't tried courgette, but may well do.
