i have just made a nice sponge and was going to make a choc buttercream icing to go on top, but i have no icing sugar!
Can i use granulated instead, as thats all i have?
Or should i make something else to put on top-any ideas?
i was thinking a lemon drizzle to pour over, but i have no lemons (but i do have squeezy lemon juice)!

google 7 minute frosting - that uses granulated sugar and is kind of meringue-y
also swiss meringue buttercream is the most amazing icing ever and uses granulated sugar. Quite a faff to make though
Oh and one final oe - my kids say this taste like not cold icecream!!

Mascarpone cheese would make a carrot cake type topping if you have some.0

If you whizz granulated up it in the food processor it becomes icing sugar.
Or just make lemon drizzle with what you have got.If you haven't got it - please don't flaunt it. TIA.0 -
If you have a jug blender you can make icing sugar using granulated.0

!!

I used to make buttercream icing as per the Cranks Cookbook, which was all wholefoods, so no icing sugar. It used butter beaten up with soft brown muscavado sugar & tasted lovely. Dieting for the past couple of years though, so haven't made it for ages........sighs.......2026's challenges: 1) To rebuild our Emergency Fund to at least £5k.
