Apple cake
Very easy, a child could make it - in fact they have; when my children were small I worked in a playgroup, and we would make it with the little ones to go with their juice.
Oven on at 180 degrees or gas 4
Weigh two eggs (in their shells)
Crack into a bowl, then add the same weight of sugar and whisk till frothy.
Then stir in the same weight of flour, and pour into a greased lined tin.
Peel and core the apples, and cut off any bruised or soft bits, cut into small pieces and drop into the cake batter. You can make a pattern if you like
You can use any amount of apples within reason.
Put in oven, and bake till the cake is risen and golden, and feels springy, about 20-25 minutes. You can test with a skewer or slim knife if you like.
Ideal to eat either as a cake or with custard for pud0 -

I just saved a wrinkly apply from the bin by micro-stewing it. Popping out the core and stuffing with raisins, brown sugar and a knob of butter. Probably destroys all health benefits but worth it for taste and bin-saving!
OH is away this week so I did a little shop last weekend and intended to live out of the freezer. To my surprise (and slight horror) I've been able to survive using up a lot of stuff in the fridge and cupboard goods to make them into meals. Hi all.
Not sure if this is the right place to post this, but I need an answer from you lovely people today.
I accidentally overcooked 2 salmon filllets! Had them in one of those brown oven bags from Asda. I had put them in the oven alongside chicken, but forgot to take them out so they are 'well done'. They aren't burnt or anything, just prob a bit on the dry side.
Now, my kids have gone off salmon, I am not a fish lover but will eat it cos it's healthy, and I need to make sumat that dh could take to work tomorrow and reheat for his lunch.
Any suggestions welcome please. Apart from flaking it into cream and having with pasta. That doesn't work to reheat next day.... tried it and it goes quite dry and sticky.
I know this is a bit late but I just wanted to say you could also make salmon fishcakes with leftover salmon.
I'm doing well, my OH and I were away for the weekend and we were tempted to have a takeaway on Thursday night, but instead I had a root around and used up the rest of the lettuce, the cucumber and half of the rocket as a salad, then I found a bag in the freezer that had a few Quron pieces in it so I cooked them up with some chorizo we had left and put them in a bowl of noodles. So we had a meal of noodles with Quron pieces and chorizo with a salad. We had half a bag of rocket left so I took that to my mums with me and had it with a meal there!
Annoyingly I had four pears left in a bag that i'd only had a few days and 3 of them had gone rotten! I literally put my finger through one of them! So I had to chuck them out, they were too far gone to salvage, so that was probably around 50p. I resent taking that off becuase it wasn't because I didn't use them in time, they just went rotten not long after buying them!I did take the fourth one away with me at the weekend and ate that up though.

Hello I would like to join in please if you will have me.
Have been watching a few things on line about food wastage and its just shocking. Why is so much thrown out when so many people in the world including 'well off' countries are struggling and going hungry.
Would like to think no more than £5 from today until end of Feb.
Have this morning used up items that would have otherwise been binned -
1) Yesterday did mum some liver & onions for her dinner and there was about 5-6 tablespoons of the gravy left so have just added it to some French onion soup that was made yesterday.
2) Have made some meatballs for tea tonight and grated a sad looking carrot into the mixture (reserved the cut off bits for soup and put in stock box in the freezer) Also threw in a handful of breadcrumbs that have been in the freezer for a long time.
Think my biggest waste is usually Staffordshire oatcakes - they go off so quickly so must remember to freeze any surplus one and while thinking of this am now off to put 6 in the freezer. See this thread is helping me already and that will have saved me 90p :rotfl:MARCH £62.38/2500 -

I am happy to report that 2-year-OOD stuffing mix was perfectly edible, although a little 'stale' tasting to me but that might just be how it always tastes.
Watching Food Inspectors on BBC and have to say I was horrified to hear them say 'anything past it's use-by has should be binned'.
