Lots of american recipes use ricotta or a mix of cottage/cream cheese and eggs. I personally find these heavier and stodgy but you may prefer if you don't like white sauce.

Something along these lines - http://www.marthastewart.com/336410/traditional-lasagna-bolognese

Are you scratch mkaing your sauce? If not this could be the problem - it really is much nicer hm.

I make a light cheese sauce, basic white sauce and then add grated cheese a bit at a time till it tastes right.

A friend once made lasagne for us with a mushroom sauce - I believe it was just mushrooms chopped small and cooked with seasonings, then added cream to make a sauce. It was yum!

  • If making your own white sauce try replacing half of the milk you would use with the same volume of chicken stock. This makes a fantastic tasting sauce and with less calories as an added bonus. We use this sauce for carbonara and cauliflower cheese as well.
I am playing all of the right notes just not necessarily in the right order :D.
