Special offer changeover dates

Most of the offers I've seen seem to end 01/01/13 or 02/01/13. I've been having problems finding organic meat and poultry in stock atm let alone offers.

I'm kinda worried that having bribed my mother with chocolate cheesecake to chauffeur me, we'll find nothing on the 2nd when I aim to start restocking the freezer.

I know that my local Lidl get frozen deliveries on a Tuesday so if there are frozen offers for a Thursday and they have the freezer room they go out on sale Wednesday

I don't know whether other supermarkets do this with fresh/frozen meat, poultry and fish ?? Or whether even if it has arrived it's kept chilled/frozen until the correct day ? Could I ask staff if they have any organic stuff out back ? If so would it be at offer price or not ?
