Lifestyle change, no meat or diary in 2013, Help me start

I am going to follow the 'Overcomming Multiple Sclerosis' diet which is no meat and no dairy, plus very low sat fat. Fish is allowed, and egg whites.
I was veggie for a couple of years about 15 years back, so the no meat is not that much of a problem. But saying that I was single then and now have a husband and 2 Ds's aged 10 and 13, who will continue to eat meat and diary.
Done a search and got my HM soya yogurt sorted.
Also thinking as only me most meals I would be better off using tinned beans than soaking for such a small quantity?
Seen dried fruit and nuts and seeds in my local Lidl which seem cheaper than local health food shop?
Also thinking about getting a dehydrator from Lakeland, can send it back for a refund if I don't get on with it.
Got breakfasts sorted, lunch will be soup, jackets or salad, mains are more of a problem, plus sweet stuff. Although will be able to eat the easy tea loaf.
Any veggies or vegans out there who can point me in the right direction of cheap good food?

I'm not familiar with this diet but I am vegan.:) Maybe get a good vegan cookbook for ideas although you can find a lot of recipes free online.I'm an ethical vegan so I don't worry about being low fatbut I know there is a good site called Fatfree Vegan with lots of recipes.

Lidl would probably be a lot cheaper for nuts and seeds although Holland & Barrett sometimes have brilliant sales where you can pick up bargains. You can get a reward card there now too I think.
Sainsbury's is very good for vegan labelling and you can email the supermarkets for their vegan lists to help you when you are shopping.
A lot of vegans I know find they prefer to eat protein with carbs for the most filling food like peanut butter on toast, baked beans and jackets, chickpea or lentil curries with rice etc...0 -

My advice would be....
Sainsburys and Co-op are good at labelling vegan food.
parsleysoup.co.uk is my favourite website with non complicated recipes!
Homous is great for everything!!
bourbon, ginger and rich tea biscuits are all ok (maybe not healthy though!)
tinned pulses just as good if you are cooking for one
Soya mince frozen in asda is vegan (although not labelled)
general rule is......if its labelled vegetarian look at allergy list and then will list if it has dairy or eggs its not ok.....only exception would be honey and a few E numbers.
oh and the make at home jus roll croissants are ok for vegans:-)

I'm not a vegan or veggie but heres a few ideas anyway. 5 bean chilli (no meat) with rice...chilli made with heinz 5bean, veg (onion, pepper,garlic, chilli, mushroom) and chopped toms...maybe a stock cube, tomato puree etc. Pesto pasta. Veg curry. Mushroom pakora. Pompadoms with spiced onions. Bruchetta. Homous & pitta. Loads of salads - olives, avacado, beetroot. Roasted veg wraps with roast potatoes.
Meant to add stir frys with homemade veg spring rolls, yum.0 -
I just want to say, well done for deciding to take on this challenge, many health conditions are improved by diet changes but people are often put off by the hard work involved and don't bother. Good luck and keep at it, find support where you can (friends, forums) and don't be disheartened at slip ups just start again.
On the practical side... buy a good book (or a few)! Read reviews on Amazon and buy accordingly.

Well I have started!
Muesli with soya milk for breakie
Apple and satsuma with cup of herbal tea for snack
Lunch salad with tuna for lunch
Slimming World Italian bean stew for tea
Made a tea loaf, which is fat and dairy free. Found receive on here ages ago.
It's very hilly where I live and my legs just won't do hills, so have decided I will drive to my local park and walk. It's quite flat I think. Will start next week when the boys are back at school.0
