Your "Thanked 1 time in 1 post" means that you have BEEN thanked once! Not that you have only thanked posters once! The thanks you give out yourself do not show on your sidebar, only if you click on your name and then "show all posts thanked by....."
So don't fret, you don't look ungrateful at all!!!
