Is it too soon...

to make stuffings and prep some veg?

OH is taking kids out and I have a couple of hours I could crack on and give myself a more relaxing day tomorrow....

I usually do stuff christmas eve and just wondering if they will last and still be good for a few days after too?

    I would. If the stuffing is cooked it will last a few days in the fridge - or prep it today and cook it on Tuesday to give you a bit longer. The veg should also be fine prepared today - after all, you can buy pre-prepped veg in the shops which probably sits there for a few days before you buy it. Some types of veg will benefit from sitting in water in the fridge so the cut edges don't go dry.

    I prep veg two or three days in advance for all sort of thing, I wash it, trim or chop, put in a plastic bag with a clip to seal it and keep it in the bottom of the fridge. You need to keep the moisture in so the edges don't dry up but leave it too long (4-5 days) and the edges will go mouldy. Bear in mind too that vitamin content decreases over time but I wouldn't worry about that for now and again tbh.

    Bening single and doing smaller portions I can do mine on the day quickly and cheat if using a combination of frozen items. However, I agree regarding what the previous posters have said especially as I watched a Christmas programme of Gordon Ramsey and Jamie Oliver and they did exactly that especially regarding the veg, stuffing and even the gravy. Still available on 4OD via the net.
