Does anyone know when M & S reduce their food?

Still can't get my head around it...
In a fairly large M&S, I went in for some fruit, I didn't need it to be reduced but if I found any it was a bonus.
I found loads with the date of the 25th on and asked one of the sales assistants if it would be marked down.
I was told "no, only food marked the 24th". I said to the assistant that I hoped they gave the stock to all the staff as the place was manic and the food (of which there was loads) wouldn't be able to be sold on the 26th when the store next opened.
The assistant replied that they were not going to be doing that, that sadly the food marked the 25th, if not purchased would just be thrown away!
I did think he was just trying to cover up the food that was going to be given to the staff...until I watched as several crates of food marked the 24th would disappear from the shelves in large green crates, later only about a third of that stock would return to the shelves...I'd place bets on staff retaining quite a bit of that themselves, stuff marked the 25th remained on the shelves.
Just can't get my head around it, I'm in London. 2 minutes walk away there are homeless people who sleep on the streets during day time because they don't want to have their things stolen from them during the day and because there is more food available during the night. Why are M&S just binning all this food??0 -

Two things - they sometimes take stuff into the 'back room' to yellow sticker it in peace. They bring it out in fits and starts and let's face it, you weren't in there long enough to see whether or not it ALL returned. Also, if food was put out into skips in the car-park or wherever, the local freegans will know and probably make good use of it, especially in London.0
